Description
A delicious and easy-to-make casserole that combines all the classic flavors of a cheeseburger while being keto-friendly and low in carbs.

- 907 g extra lean ground beef
- 2 tsp coarse kosher salt
- ¼ tsp ground black pepper
- 1 tbsp minced garlic
- 60 ml avocado oil mayonnaise
- 60 ml unsweetened ketchup
- 1 tbsp mustard
- 1 medium onion, finely chopped
- 170 g shredded sharp cheddar cheese, divided
- 2 tbsp olive oil
- Olive oil spray
Instructions
- Preheat the oven to 204°C.
- Lightly coat a 1.9 L baking dish with olive oil spray.
- Heat olive oil in a large skillet over medium-high heat for 2 minutes.
- Add chopped onions and ground beef to the skillet.
- Cook the mixture until the beef is browned and onions are tender, approximately 5 minutes. Drain excess liquid if needed.
- Season with black pepper, minced garlic, and kosher salt; stir and cook for several minutes to combine flavors.
- Remove the skillet from heat. Stir in ketchup, mayonnaise, mustard, and 113 g of shredded cheddar cheese until well mixed.
- Transfer the mixture to the prepared baking dish and sprinkle the remaining cheddar cheese on top.
- Bake in the preheated oven for 15 minutes until the cheese is melted and the dish is heated through.
- If broiler-safe, place under the broiler 15 cm from heating element for 1–2 minutes until cheese is melted and lightly browned.
Notes
Works well for meal prep. Can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
