- 2 tablespoons Olive Oil
- 1 cup Bell Peppers
- 1 medium Onion
- 8 large Eggs
- 1 cup Cheddar Cheese
- 1 medium Delicata Squash
- 1 pound Breakfast Sausage
- 1 teaspoon Salt
- 1 teaspoon Paprika
- 1 teaspoon Sage
- 1/2 teaspoon Black Pepper
- 1 teaspoon Thyme
- 1/4 teaspoon Cayenne
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add chopped bell peppers and diced onion, and sauté for 5–7 minutes until soft.
- Add the breakfast sausage to the skillet. Cook until browned, about 8–10 minutes, and drain excess grease if needed.
- In a large bowl, crack the eggs and add salt, paprika, sage, black pepper, thyme, and cayenne. Whisk until well blended.
- Combine the cooked sausage and sautéed vegetables with the egg mixture. Fold in shredded cheddar cheese and diced delicata squash.
- Grease a 9×13 inch baking dish with olive oil and pour the mixture into the dish, spreading it evenly.
- Bake for 25–30 minutes or until the center is set and the top is golden brown. Check doneness with a knife in the center.
- Allow to cool for a few minutes before slicing into squares. Serve warm.
