Description

Delicious jumbo muffins filled with caramelized peaches, perfect for breakfast or a snack.


Ingredients

  • 2 cups chopped peaches
  • ½ cup dark brown sugar
  • 1 teaspoon cinnamon (optional)
  • 6 tablespoons salted butter, melted
  • 2 teaspoons vanilla extract
  • ¾ cup brown sugar
  • ¾ cup plain Greek yogurt
  • 3 eggs, at room temperature
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line 2 muffin tins with paper liners.
  3. In a mixing bowl, combine chopped peaches, dark brown sugar, cinnamon (if using), melted butter, and vanilla extract.
  4. Spoon about 2 teaspoons of the peach mixture into each muffin cup and bake for 10 minutes.
  5. In another bowl, whisk together melted salted butter, brown sugar, Greek yogurt, and eggs.
  6. Gradually add in the flour, baking powder, and salt. Mix until incorporated.
  7. Fold in ¼ to ⅓ cup of the peach mixture and let the batter rest for 5-15 minutes.
  8. Divide the muffin batter among the muffin tins, filling each to the top.
  9. Add the remaining peach mixture over each muffin and gently swirl it into the batter.
  10. Bake for about 8 minutes, then reduce the temperature to 350°F (175°C) and continue baking for another 20 to 30 minutes.
  11. Let the muffins cool in the tins for about 5 minutes before serving.

These muffins can be stored in an airtight container for up to 3 days, or frozen for up to 3 months.
