Delicious jumbo muffins filled with caramelized peaches, perfect for breakfast or a snack.
Ingredients

- 2 cups chopped peaches
- ½ cup dark brown sugar
- 1 teaspoon cinnamon (optional)
- 6 tablespoons salted butter, melted
- 2 teaspoons vanilla extract
- ¾ cup brown sugar
- ¾ cup plain Greek yogurt
- 3 eggs, at room temperature
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
Instructions
- Preheat your oven to 425°F (220°C).
- Line 2 muffin tins with paper liners.
- In a mixing bowl, combine chopped peaches, dark brown sugar, cinnamon (if using), melted butter, and vanilla extract.
- Spoon about 2 teaspoons of the peach mixture into each muffin cup and bake for 10 minutes.
- In another bowl, whisk together melted salted butter, brown sugar, Greek yogurt, and eggs.
- Gradually add in the flour, baking powder, and salt. Mix until incorporated.
- Fold in ¼ to ⅓ cup of the peach mixture and let the batter rest for 5-15 minutes.
- Divide the muffin batter among the muffin tins, filling each to the top.
- Add the remaining peach mixture over each muffin and gently swirl it into the batter.
- Bake for about 8 minutes, then reduce the temperature to 350°F (175°C) and continue baking for another 20 to 30 minutes.
- Let the muffins cool in the tins for about 5 minutes before serving.

These muffins can be stored in an airtight container for up to 3 days, or frozen for up to 3 months.
