Juicy Japanese chicken skewers – yakitori glazed with a sweet-savory sauce. Super easy to make at home with simple ingredients.

Ingredients

Scale

1 ½ lbs boneless chicken thighs

½ cup soy sauce

½ cup mirin

¼ cup sake (or substitute)

3 tbsp sugar

57 green onions

Salt and black pepper

Wooden skewers

Instructions

1. Combine soy sauce, mirin, sake, sugar, and green onion in saucepan. Simmer until reduced.

2. Thread chicken and green onion on skewers, season with salt and pepper.

3. Grill or pan-fry 2–3 minutes per side until browned.

4. Brush with glaze, continue cooking until cooked through.

5. Serve hot with sesame seeds and rice.

Notes

Soak skewers in water before grilling to prevent burning. For non-alcoholic version, replace sake and mirin with dashi and sugar.
