Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup peaches, sliced (fresh or canned)
  • 2 jalapeños, finely chopped (seeds removed for less heat if desired)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare the Chicken: Start by patting the chicken breasts dry with paper towels. Season both sides with salt, pepper, and garlic powder.
  2. Make the Marinade: In a small bowl, mix together olive oil, honey, soy sauce, chopped jalapeños, and sliced peaches.
  3. Marinate the Chicken: Place the chicken in a resealable bag and pour half of the marinade over it. Seal and refrigerate for at least 30 minutes to 2 hours.
  4. Cook the Chicken: Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off.
  5. Grill or Sear the Chicken: Place on the grill or skillet and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  6. Glaze the Chicken: While cooking, pour the reserved marinade into a small saucepan, bring it to a boil, and let it simmer until it thickens slightly.
  7. Finish Cooking: During the last few minutes, brush thickened glaze over the chicken.
  8. Serve: Let the chicken rest for a few minutes, slice, and drizzle additional glaze on top if desired. Garnish with fresh cilantro.
