Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the ricotta cheese, sugar, and butter until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and almond extract if using.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 15-20 minutes or until the edges are lightly golden.
- Allow to cool before dusting with powdered sugar.
