- 4 chicken thighs
- 1 can diced tomatoes
- 1 cup mushrooms, sliced
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Season the chicken thighs with salt and pepper and add them to the skillet. Brown on both sides, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add garlic, mushrooms, and bell pepper. Sauté until softened, about 5 minutes.
- Stir in the diced tomatoes, oregano, and basil. Return the chicken to the skillet, cover, and simmer for about 25-30 minutes until the chicken is cooked through.
- Garnish with fresh parsley and serve hot.
Notes
Don’t overcrowd the pan and adjust seasonings to taste for perfect flavor.
