Description

A delicious one-pan meal combining tender chicken, fresh vegetables, and Mediterranean flavors.


Ingredients

  • 4 chicken thighs
  • 1 can diced tomatoes
  • 1 cup mushrooms, sliced
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken thighs with salt and pepper and add them to the skillet. Brown on both sides, about 5-7 minutes.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add garlic, mushrooms, and bell pepper. Sauté until softened, about 5 minutes.
  5. Stir in the diced tomatoes, oregano, and basil. Return the chicken to the skillet, cover, and simmer for about 25-30 minutes until the chicken is cooked through.
  6. Garnish with fresh parsley and serve hot.

Notes

Don’t overcrowd the pan and adjust seasonings to taste for perfect flavor.
