Instructions
- Prepare the potatoes: Start by peeling the Yukon Gold potatoes. Once peeled, cut them into even chunks.
- Boil the potatoes: Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes, or until tender.
- Drain and mash: Drain the potatoes well. Return them to the pot and shake off any excess moisture. Use a potato masher to mash until smooth.
- Add the milk and butter: Heat the milk over low heat until warm. Slowly pour it into the mashed potatoes while mixing. Add the softened butter and stir until creamy.
- Mix in the scallions: Gently fold in the finely chopped scallions.
- Season to taste: Add salt and black pepper to taste. Mix well.
