- 1 lb (450g) sausage (Italian, bratwurst, or plant-based)
- 1.5 lbs (680g) Yukon Gold or red potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried rosemary or thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Lightly spray a baking dish with nonstick cooking spray.
- Chop the potatoes into bite-sized pieces.
- Toss the chopped potatoes in olive oil, garlic powder, onion powder, salt, and pepper until well-coated.
- Nestle the sausages among the seasoned potatoes in the baking dish.
- Sprinkle fresh herbs over everything.
- Bake for 30-35 minutes until sausages are cooked through and potatoes are golden brown.
