Ingredients

  • 1.5 lbs (680g) Yukon Gold or red potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried rosemary or thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly spray a baking dish with nonstick cooking spray.
  3. Chop the potatoes into bite-sized pieces.
  4. Toss the chopped potatoes in olive oil, garlic powder, onion powder, salt, and pepper until well-coated.
  5. Nestle the sausages among the seasoned potatoes in the baking dish.
  6. Sprinkle fresh herbs over everything.
  7. Bake for 30-35 minutes until sausages are cooked through and potatoes are golden brown.
