Description

Delightful cookie bars combining raspberry jam and a crumbly oat topping.


Ingredients

Scale
  • 1/2 cup cold butter (cut into small cubes)
  • 17.5 oz sugar cookie mix
  • 1 cup seedless raspberry jam
  • 17.5 oz oatmeal cookie mix
  • 1 tbsp water
  • 1/2 cup chopped almonds (roughly 1/4-inch pieces)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large bowl, combine the sugar cookie mix and cold butter cubes. Mix until crumbly.
  3. Press half of the sugar cookie mixture into the bottom of the baking dish.
  4. Spread the raspberry jam over the pressed cookie base.
  5. In another bowl, mix oatmeal cookie mix, cold butter cubes, and chopped almonds. Add water to bind.
  6. Sprinkle the oatmeal mixture evenly on top of the jam layer.
  7. Bake for 25-30 minutes until golden brown.
  8. Let cool for 10 minutes before transferring to a wire rack to cool completely. Cut into squares or bars and enjoy!

Notes

Use cold butter for better texture. Don’t over-bake to maintain moistness.
