Delightful cookie bars combining raspberry jam and a crumbly oat topping.
Ingredients

- 1/2 cup cold butter (cut into small cubes)
- 17.5 oz sugar cookie mix
- 1 cup seedless raspberry jam
- 17.5 oz oatmeal cookie mix
- 1 tbsp water
- 1/2 cup chopped almonds (roughly 1/4-inch pieces)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
- In a large bowl, combine the sugar cookie mix and cold butter cubes. Mix until crumbly.
- Press half of the sugar cookie mixture into the bottom of the baking dish.
- Spread the raspberry jam over the pressed cookie base.
- In another bowl, mix oatmeal cookie mix, cold butter cubes, and chopped almonds. Add water to bind.
- Sprinkle the oatmeal mixture evenly on top of the jam layer.
- Bake for 25-30 minutes until golden brown.
- Let cool for 10 minutes before transferring to a wire rack to cool completely. Cut into squares or bars and enjoy!
Notes
Use cold butter for better texture. Don’t over-bake to maintain moistness.
