- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) enchilada sauce
- 2 cups cheese (cheddar or Mexican blend)
- 1 package (9 oz) cheese tortellini
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, brown the ground beef with chopped onion and minced garlic until the beef is cooked through. Drain excess fat.
- Stir in the enchilada sauce, chili powder, cumin, salt, and pepper.
- Cook the tortellini according to package instructions, then drain.
- In a large mixing bowl, combine the beef mixture and the tortellini.
- Transfer the mixture to a baking dish and sprinkle cheese on top.
- Bake for 20-25 minutes or until cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
