Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) enchilada sauce
  • 2 cups cheese (cheddar or Mexican blend)
  • 1 package (9 oz) cheese tortellini
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef with chopped onion and minced garlic until the beef is cooked through. Drain excess fat.
  3. Stir in the enchilada sauce, chili powder, cumin, salt, and pepper.
  4. Cook the tortellini according to package instructions, then drain.
  5. In a large mixing bowl, combine the beef mixture and the tortellini.
  6. Transfer the mixture to a baking dish and sprinkle cheese on top.
  7. Bake for 20-25 minutes or until cheese is bubbly and golden.
  8. Garnish with fresh cilantro before serving.
