Description

A warm and hearty Italian chicken soup made easily in the Instant Pot, perfect for busy days.


Ingredients

Scale
  • 2 tablespoons Olive oil
  • 1 large Yellow onion (minced)
  • 4 cloves Garlic (minced)
  • 3 stalks Celery (minced)
  • 3 Carrots (peeled and chopped)
  • 8 cups Water or chicken broth
  • 1/4 cup Better than Bouillon chicken
  • 2 Bay leaves
  • 3 teaspoons Kosher salt
  • 1 teaspoon Fresh black pepper
  • 3 medium Tomatoes (minced)
  • 1 Tomato (chopped for fresh pop)
  • 1 cup Orzo pasta (cooked and drained)
  • 2 pounds Rotisserie chicken (shredded)
  • 1/2 bunch Parsley (minced)
  • 3/4 cup Fresh basil (minced)
  • 1/2 Lemon (juiced)
  • 1/2 cup Parmesan cheese
  • Bread (for serving)

Instructions

  1. Start by setting your Instant Pot to the sauté mode.
  2. Add the olive oil to the pot. Once it’s hot, toss in the minced onion and cook until they become soft and translucent.
  3. Mix in the minced garlic, celery, and carrots. Cook for another 3-5 minutes, stirring occasionally.
  4. Pour in either the water or chicken broth. If you’re using water, add the Better than Bouillon chicken to enhance the flavor.
  5. Add the bay leaves, salt, pepper, minced tomatoes, and the chopped tomato. Stir to mix everything well.
  6. Close the lid of the Instant Pot. Set it to cook on high pressure for 10 minutes.
  7. Once the cooking time is over, let the pressure release naturally for about 10 minutes, then do a quick release for any remaining pressure.
  8. Open the lid and remove the bay leaves.
  9. Stir in the cooked orzo, shredded rotisserie chicken, minced parsley, minced basil, and lemon juice.
  10. Allow the soup to heat through for another 5-10 minutes.
  11. Serve the soup hot and sprinkle with Parmesan cheese. Don’t forget to have some bread on the side for a delightful meal!

Notes

For best results, use fresh ingredients. Adjust seasoning to taste before serving.
