Description
A warm and hearty Italian chicken soup made easily in the Instant Pot, perfect for busy days.

- 2 tablespoons Olive oil
- 1 large Yellow onion (minced)
- 4 cloves Garlic (minced)
- 3 stalks Celery (minced)
- 3 Carrots (peeled and chopped)
- 8 cups Water or chicken broth
- 1/4 cup Better than Bouillon chicken
- 2 Bay leaves
- 3 teaspoons Kosher salt
- 1 teaspoon Fresh black pepper
- 3 medium Tomatoes (minced)
- 1 Tomato (chopped for fresh pop)
- 1 cup Orzo pasta (cooked and drained)
- 2 pounds Rotisserie chicken (shredded)
- 1/2 bunch Parsley (minced)
- 3/4 cup Fresh basil (minced)
- 1/2 Lemon (juiced)
- 1/2 cup Parmesan cheese
- Bread (for serving)
Instructions
- Start by setting your Instant Pot to the sauté mode.
- Add the olive oil to the pot. Once it’s hot, toss in the minced onion and cook until they become soft and translucent.
- Mix in the minced garlic, celery, and carrots. Cook for another 3-5 minutes, stirring occasionally.
- Pour in either the water or chicken broth. If you’re using water, add the Better than Bouillon chicken to enhance the flavor.
- Add the bay leaves, salt, pepper, minced tomatoes, and the chopped tomato. Stir to mix everything well.
- Close the lid of the Instant Pot. Set it to cook on high pressure for 10 minutes.
- Once the cooking time is over, let the pressure release naturally for about 10 minutes, then do a quick release for any remaining pressure.
- Open the lid and remove the bay leaves.
- Stir in the cooked orzo, shredded rotisserie chicken, minced parsley, minced basil, and lemon juice.
- Allow the soup to heat through for another 5-10 minutes.
- Serve the soup hot and sprinkle with Parmesan cheese. Don’t forget to have some bread on the side for a delightful meal!
Notes
For best results, use fresh ingredients. Adjust seasoning to taste before serving.
