Ingredients

  • 3 large chicken breasts, trimmed and sliced in half horizontally
  • 1 cup buttermilk
  • Âľ teaspoon kosher salt
  • Âľ cup all-purpose flour
  • Âľ cup panko breadcrumbs
  • 2 teaspoons garlic powder
  • Âľ teaspoon smoked paprika
  • ÂĽ cup butter, melted
  • ÂĽ cup honey
  • Âľ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ÂĽ teaspoon kosher salt
  • Âľ teaspoon baking powder
  • ½ teaspoon ground black pepper

Instructions

  1. In a bowl, mix buttermilk and Âľ teaspoon kosher salt. Marinate the chicken for at least 30 minutes.
  2. Combine flour, panko breadcrumbs, 2 teaspoons garlic powder, ¾ teaspoon smoked paprika, ¾ teaspoon baking powder, and ½ teaspoon ground black pepper in a shallow dish.
  3. Dredge marinated chicken in the flour mixture, pressing to coat evenly. For a thicker coating, dip in buttermilk and then return to the flour mixture.
  4. Heat ¼ inch of neutral oil in a pan over medium-high heat. Cook chicken for 4-5 minutes on each side until golden brown and cooked through or bake at 400°F (200°C) for 20-25 minutes.
  5. In a saucepan, whisk together melted butter, honey, 1 tablespoon smoked paprika, ¾ teaspoon cayenne pepper, ½ teaspoon garlic powder, and ¼ teaspoon kosher salt over medium-low heat until smooth.
  6. Brush the hot honey sauce generously over the cooked chicken and let it rest for a couple of minutes before serving.

Notes

For extra crispiness, consider double-dipping the chicken in buttermilk and flour mixture.
