Description

A classic comfort food that combines creamy soups, chicken, and rice in an easy-to-make casserole, perfect for weeknight dinners.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups minute rice (white or brown)
  • 1 can cream of mushroom soup (10½ oz)
  • 1 can cream of chicken soup (10½ oz)
  • 1 can water (use empty soup can)
  • 1 tablespoon butter
  • 1 envelope onion soup mix

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9Ă—13-inch baking dish with butter.
  3. In a mixing bowl, stir together the cream of mushroom soup, cream of chicken soup, and one full can of water until smooth.
  4. Stir the minute rice into the soup mixture until evenly coated.
  5. Pour the rice mixture into the prepared baking dish and spread it evenly. Place the chicken breasts on top.
  6. Sprinkle the onion soup mix over the chicken breasts.
  7. Cover the dish tightly with aluminum foil and bake for 60 to 90 minutes.
  8. Remove from the oven and let rest for 5 minutes before serving warm.
