Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup coconut oil, melted
  • 3/4 cup coconut sugar
  • 1/4 cup almond milk
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1/2 tsp vanilla extract
  • Powdered sugar for icing (optional)
  • Lemon juice for icing (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine all-purpose flour, almond flour, baking soda, and salt. Stir well.
  3. In another bowl, mix melted coconut oil and coconut sugar until smooth.
  4. Add almond milk, lemon juice, lemon zest, and vanilla extract to the wet mixture and stir until combined.
  5. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet and flatten slightly.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Cool cookies on the baking sheet for a few minutes before transferring to a wire rack.
  9. For icing, mix powdered sugar with lemon juice until desired consistency is reached and drizzle over cooled cookies (optional).

Store cookies in an airtight container for freshness; refrigerate for longer shelf life. Dough can be frozen for future baking.
