- 1/2 cup almond flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup coconut oil, melted
- 3/4 cup coconut sugar
- 1/4 cup almond milk
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1/2 tsp vanilla extract
- Powdered sugar for icing (optional)
- Lemon juice for icing (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine all-purpose flour, almond flour, baking soda, and salt. Stir well.
- In another bowl, mix melted coconut oil and coconut sugar until smooth.
- Add almond milk, lemon juice, lemon zest, and vanilla extract to the wet mixture and stir until combined.
- Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet and flatten slightly.
- Bake for 10-12 minutes until edges are lightly golden.
- Cool cookies on the baking sheet for a few minutes before transferring to a wire rack.
- For icing, mix powdered sugar with lemon juice until desired consistency is reached and drizzle over cooled cookies (optional).
Notes
Store cookies in an airtight container for freshness; refrigerate for longer shelf life. Dough can be frozen for future baking.
