Description
A retro 1940s-style recipe for golden, crisp-on-the-outside, tender-on-the-inside bread stuffing balls made with pantry staples and timeless flavor.
Ingredients
5 cups stale bread, cubed
2 tbsp bacon drippings or butter
1 small onion, diced
1 celery stalk, finely chopped
1 tsp dried sage
1/2 tsp dried thyme
1/2 tsp black pepper
3/4 cup broth (chicken or vegetable)
1 large egg (optional)
Instructions
1. Preheat oven to 375°F. Line a baking sheet with parchment.
2. Dry bread cubes in oven for 10 minutes if not already stale.
3. In a pan, sauté onion and celery in drippings until soft.
4. In a bowl, combine bread, sautéed vegetables, herbs, and pepper.
5. Slowly add broth until mixture holds when pressed.
6. Add egg if using. Mix well.
7. Shape into golf-ball sized balls.
8. Place on baking sheet and bake for 20–25 minutes or until crisp and golden.
Notes
Freeze unbaked balls and bake directly from frozen at 375°F for 30 minutes.
Swap drippings for vegan butter for a vegetarian version.
Serve with gravy, cranberry sauce, or roast meats.
