A delicious bowl combining roasted sweet potatoes, savory ground beef, creamy cottage cheese, fresh avocado, and a sweet kick from hot honey.
Ingredients

- 4½ cups cubed sweet potatoes (about 1½ pounds)
- ½ tsp salt
- ¼ tsp pepper
- ¼ tsp cinnamon
- 1 lb lean ground beef
- 1 tbsp tomato paste
- 1 tbsp taco seasoning
- 2 cups low-fat cottage cheese
- 1 large avocado (or 2 small)
- 4 tbsp hot honey
Instructions
- Preheat oven to 425°F (220°C).
- Place the cubed sweet potatoes on a baking sheet.
- Spray with avocado oil and season with salt, pepper, and cinnamon. Toss to coat the sweet potatoes evenly.
- Roast sweet potatoes for about 30 minutes, flipping halfway through.
- While the sweet potatoes roast, heat a skillet over medium-high heat and add the ground beef. Brown it.
- Stir in the tomato paste and taco seasoning once the beef is fully browned, cooking until heated through.
- Build your bowl with roasted sweet potatoes, seasoned ground beef, a scoop of cottage cheese, sliced avocado, and a drizzle of hot honey.

Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 2 months.
