Description

A delicious bowl combining roasted sweet potatoes, savory ground beef, creamy cottage cheese, fresh avocado, and a sweet kick from hot honey.


Ingredients

Scale
  • 4½ cups cubed sweet potatoes (about 1½ pounds)
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp cinnamon
  • 1 lb lean ground beef
  • 1 tbsp tomato paste
  • 1 tbsp taco seasoning
  • 2 cups low-fat cottage cheese
  • 1 large avocado (or 2 small)
  • 4 tbsp hot honey

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place the cubed sweet potatoes on a baking sheet.
  3. Spray with avocado oil and season with salt, pepper, and cinnamon. Toss to coat the sweet potatoes evenly.
  4. Roast sweet potatoes for about 30 minutes, flipping halfway through.
  5. While the sweet potatoes roast, heat a skillet over medium-high heat and add the ground beef. Brown it.
  6. Stir in the tomato paste and taco seasoning once the beef is fully browned, cooking until heated through.
  7. Build your bowl with roasted sweet potatoes, seasoned ground beef, a scoop of cottage cheese, sliced avocado, and a drizzle of hot honey.

Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 2 months.
