Description

A flavorful one-pan dish featuring chicken breasts baked with a hot honey glaze and feta cheese, complemented by cherry tomatoes.


Ingredients

  • 4 boneless, skinless chicken breasts (About 1.5 lbs total)
  • 8 oz block feta cheese (packed in brine)
  • 1 pint cherry tomatoes
  • 1/4 cup honey
  • 2 tbsp hot sauce (Such as Sriracha or Frank’s RedHot)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (Optional)
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley (chopped, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the seasoned chicken breasts and sear for about 5 minutes on each side until golden brown.
  5. Add the minced garlic to the skillet and sauté for about a minute until fragrant.
  6. Add the cherry tomatoes around the chicken.
  7. Combine honey, hot sauce, dried oregano, and red pepper flakes in a small bowl; stir until well mixed.
  8. Pour the mixture over the chicken breasts and tomatoes in the skillet.
  9. Crumble the feta cheese over the chicken and tomatoes.
  10. Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken reaches 165°F (75°C).
  11. Remove from the oven, let cool for a few minutes, and garnish with chopped fresh parsley before serving.

Notes

Avoid overcrowding the pan for proper searing and roasting. Use fresh ingredients for the best flavor.
