- 4 boneless, skinless chicken breasts (About 1.5 lbs total)
- 8 oz block feta cheese (packed in brine)
- 1 pint cherry tomatoes
- 1/4 cup honey
- 2 tbsp hot sauce (Such as Sriracha or Frank’s RedHot)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (Optional)
- Salt and black pepper to taste
- 2 tbsp fresh parsley (chopped, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and black pepper on both sides.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the seasoned chicken breasts and sear for about 5 minutes on each side until golden brown.
- Add the minced garlic to the skillet and sauté for about a minute until fragrant.
- Add the cherry tomatoes around the chicken.
- Combine honey, hot sauce, dried oregano, and red pepper flakes in a small bowl; stir until well mixed.
- Pour the mixture over the chicken breasts and tomatoes in the skillet.
- Crumble the feta cheese over the chicken and tomatoes.
- Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken reaches 165°F (75°C).
- Remove from the oven, let cool for a few minutes, and garnish with chopped fresh parsley before serving.
Notes
Avoid overcrowding the pan for proper searing and roasting. Use fresh ingredients for the best flavor.
