Description

A delicious and nutritious bowl featuring chicken, quinoa, and roasted broccoli with a spicy and sweet hot honey glaze.


Ingredients

  • 2 Chicken breasts
  • 1/4 cup Hot honey
  • 1 cup Quinoa
  • 1 cup Broccoli
  • 2 tbsp Soy sauce
  • 2 cloves Garlic
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cook quinoa according to package instructions.
  3. Cut chicken into bite-sized pieces and season with salt and pepper.
  4. In a large skillet, heat olive oil over medium heat, and cook chicken until browned and cooked through.
  5. Add garlic and cook for an additional minute.
  6. Pour in hot honey and soy sauce, stirring to coat the chicken.
  7. Meanwhile, toss broccoli in olive oil, salt, and pepper, and roast in the oven for about 20 minutes.
  8. Serve the glazed chicken over quinoa with roasted broccoli on the side.
