- 2 Chicken breasts
- 1/4 cup Hot honey
- 1 cup Quinoa
- 1 cup Broccoli
- 2 tbsp Soy sauce
- 2 cloves Garlic
- 2 tbsp Olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Cook quinoa according to package instructions.
- Cut chicken into bite-sized pieces and season with salt and pepper.
- In a large skillet, heat olive oil over medium heat, and cook chicken until browned and cooked through.
- Add garlic and cook for an additional minute.
- Pour in hot honey and soy sauce, stirring to coat the chicken.
- Meanwhile, toss broccoli in olive oil, salt, and pepper, and roast in the oven for about 20 minutes.
- Serve the glazed chicken over quinoa with roasted broccoli on the side.
Notes
Avoid overcooking the chicken and consider adding other vegetables for variations.
