Description

A delicious blend of spicy and sweet flavors featuring glazed chicken over quinoa with roasted broccoli.


Ingredients

Scale
  • 4 Chicken breasts
  • 1/4 cup Hot honey
  • 1 cup Quinoa
  • 2 cups Broccoli
  • 2 tbsp Soy sauce
  • 2 cloves Garlic, minced
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cook quinoa according to package instructions.
  3. Cut chicken into bite-sized pieces and season with salt and pepper.
  4. Heat olive oil in a large skillet over medium heat, and cook chicken until browned and cooked through.
  5. Add garlic and cook for an additional minute.
  6. Pour in hot honey and soy sauce, stirring to coat the chicken.
  7. Toss broccoli in olive oil, salt, and pepper, and roast in the oven for about 20 minutes.
  8. Serve the glazed chicken over quinoa with roasted broccoli on the side.

Notes

Add a splash of water or more hot honey when reheating leftovers for moisture.
