- 2 Sweet potatoes
- 1 lb Ground beef
- 1 cup Cottage cheese
- 1 Avocado, sliced
- 3 tbsp Honey
- 1 tsp Red pepper flakes
- 1 tsp Salt
- 1/2 tsp Pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Cut sweet potatoes in half lengthwise and scoop out some flesh to create a boat. Season with salt and pepper.
- Roast the sweet potatoes in the preheated oven for about 25-30 minutes or until tender.
- Brown the ground beef in a skillet over medium heat and season to taste.
- Mix honey and red pepper flakes in a small bowl to make the drizzle.
- Fill the roasted sweet potatoes with the cooked ground beef, top with cottage cheese and avocado, and drizzle with hot honey before serving.
