- 1 jar (7 oz) marshmallow creme
- 1½ cups powdered sugar
- 1 teaspoon pure vanilla extract
- 2 tablespoons heavy cream
- Pinch of salt
- ½ cup semi-sweet chocolate chips or chopped chocolate
- 1 teaspoon neutral oil (optional)
- Finely crushed peppermint candies or candy canes
Instructions
- Cream the softened butter and both sugars in a large bowl until smooth. Mix in the egg, egg yolk, vanilla extract, and peppermint extract.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Fold the dry mixture into the wet mixture until combined, then gently stir in the chocolate chips.
- Cover the dough with plastic wrap and refrigerate for 45 to 60 minutes.
- Preheat oven to 325°F (165°C) and line baking sheets with parchment paper. Scoop mounds of dough onto sheets, leaving space between each one. Bake for 12 to 14 minutes until edges are set and centers are soft.
- Let cookies cool on the sheets for a few minutes before transferring to a wire rack to cool completely.
- To make the frosting, beat softened butter until pale and creamy. Add marshmallow creme and beat until combined. Gradually mix in powdered sugar, vanilla extract, pinch of salt, and heavy cream until fluffy.
- Frost the cooled cookies with marshmallow frosting and sprinkle with crushed peppermint.
- Melt chocolate and drizzle over frosted cookies. Let set for 10 to 15 minutes before serving.
