Description

Soft, chewy cookies that taste just like a warm cup of hot cocoa, filled with chocolate chips and optional marshmallows.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 cup mini marshmallows (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each, then add the vanilla extract.
  5. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low until just combined.
  7. Fold in the chocolate chips and mini marshmallows.
  8. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving 2 inches of space between each cookie.
  9. Bake for 10-12 minutes, until edges are set but centers are soft.
  10. Cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

These cookies are best stored in an airtight container. They can last up to a week at room temperature or up to three months in the freezer.
