- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
- 1 cup mini marshmallows (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each, then add the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low until just combined.
- Fold in the chocolate chips and mini marshmallows.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving 2 inches of space between each cookie.
- Bake for 10-12 minutes, until edges are set but centers are soft.
- Cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
These cookies are best stored in an airtight container. They can last up to a week at room temperature or up to three months in the freezer.
