Delicious cookies featuring a delightful combination of honey sweetness and pistachio crunch.


Ingredients

  • 1 cup all-purpose flour (can substitute with gluten-free flour blend)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey (consider using flavored honey)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped pistachios (can substitute with walnuts or almonds)
  • 1/4 cup sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the all-purpose flour, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter and honey until light and fluffy, then add the vanilla extract.
  4. Slowly add the dry ingredients to the wet mixture, stirring gently.
  5. Fold in the chopped pistachios.
  6. Roll portions of the dough into balls and coat in sugar.
  7. Place on the baking sheet with space in between and bake for 10-12 minutes.
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
