Ingredients

- 1 cup all-purpose flour (can substitute with gluten-free flour blend)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup honey (consider using flavored honey)
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped pistachios (can substitute with walnuts or almonds)
- 1/4 cup sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine the all-purpose flour, baking soda, and salt.
- In a separate bowl, cream together the softened butter and honey until light and fluffy, then add the vanilla extract.
- Slowly add the dry ingredients to the wet mixture, stirring gently.
- Fold in the chopped pistachios.
- Roll portions of the dough into balls and coat in sugar.
- Place on the baking sheet with space in between and bake for 10-12 minutes.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
