Ingredients

  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 tablespoon olive oil

  • 1 cup cooked rice (white or brown)
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Marinate the chicken: In a small bowl, mix together honey, lime juice, olive oil, garlic powder, salt, and pepper. Pour the mixture over the chicken breasts in a zip-top bag or shallow dish. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  2. Cook the chicken: Preheat your grill or stovetop grill pan over medium heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the chicken is cooked through (internal temperature of 165°F). Once done, let the chicken rest for 5 minutes before slicing.
