- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cooked rice (white or brown)
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, halved
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Marinate the chicken: In a small bowl, mix together honey, lime juice, olive oil, garlic powder, salt, and pepper. Pour the mixture over the chicken breasts in a zip-top bag or shallow dish. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- Cook the chicken: Preheat your grill or stovetop grill pan over medium heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the chicken is cooked through (internal temperature of 165°F). Once done, let the chicken rest for 5 minutes before slicing.
- Prepare the rice stack: While the chicken is resting, mix the cooked rice with diced avocado and cherry tomatoes in a medium bowl. Season with a bit of salt and pepper, and add a splash of lime juice if desired.
- Assemble the stack: On a plate, layer a scoop of the avocado rice mixture. Top with sliced grilled chicken. You can make multiple layers if you’d like.
