- 2 medium sweet potatoes, roasted and cubed
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup honey
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh herbs or nuts for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then toss them with olive oil and honey. Spread them on a baking sheet and roast for 25-30 minutes until tender.
- In a large bowl, combine the mixed greens, cherry tomatoes, and red onion.
- In a small bowl, whisk together the honey, olive oil, apple cider vinegar, and lemon juice. Season with salt and pepper.
- Once the sweet potatoes are roasted, let them cool slightly before adding them to the salad.
- Drizzle the vinaigrette over the salad and toss gently.
- Garnish with fresh herbs or nuts if desired.
- Serve immediately or refrigerate for later enjoyment.
