Ingredients

  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced

  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil and honey. Spread them on a baking sheet and roast for 25-30 minutes until tender.
  3. In a large bowl, combine the mixed greens, cherry tomatoes, and red onion.
