Ingredients

  • 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 2 cups broccoli florets, cut into 1/2-inch pieces
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, finely minced

Instructions

  1. Preheat your oven to 400°F.
  2. Line a sheet pan with parchment paper or lightly coat it with nonstick spray.
  3. In a single layer, arrange the sliced sausage, diced sweet potatoes, and broccoli florets on the prepared sheet pan.
  4. In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for one minute.
  5. Stir in honey, soy sauce, apple cider vinegar, salt, and pepper. Let simmer for 2-3 minutes.
  6. Pour the honey garlic glaze over the ingredients on the sheet pan and toss to coat.
  7. Roast in the oven for 25-30 minutes, stirring halfway through until sweet potatoes are fork-tender.
  8. Sprinkle with parsley before serving.

Notes

Adjust the sweetness of the glaze by reducing the amount of honey if preferred. Add various vegetables or proteins to customize the dish.
