- 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 2 cups broccoli florets, cut into 1/2-inch pieces
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 1 tablespoon apple cider vinegar
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh parsley, finely minced
Instructions
- Preheat the oven to 400°F and line a sheet pan with parchment paper or coat it with nonstick spray.
- Arrange the sausage, sweet potatoes, and broccoli on the prepared sheet pan.
- Melt the butter in a small saucepan over medium heat and sauté the garlic for 1 minute until fragrant.
- Add honey, soy sauce, apple cider vinegar, salt, and pepper, simmer for 2–3 minutes.
- Pour the glaze over the ingredients on the sheet pan and toss lightly to coat.
- Roast in the oven for 25–30 minutes, stirring halfway through, until sweet potatoes are fork-tender and sausage is browned.
- Sprinkle with minced parsley before serving.
Notes
Ensure not to overcrowd the pan for even roasting. Cut vegetables to a similar size for uniform cooking.
