Ingredients

  • 2 large sweet potatoes, peeled and cubed

  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss sweet potatoes with olive oil, paprika, salt, and pepper until well-coated.
  3. Spread sweet potatoes on a baking sheet in a single layer.
  4. Cut sausage into bite-sized pieces and add to the baking sheet with the sweet potatoes.
  5. Roast in the oven for about 25 to 30 minutes, stirring halfway through, until sweet potatoes are tender and sausage is cooked through.
