Description

A delicious and easy sheet pan meal combining savory sausage, sweet potatoes, and broccoli, all drizzled with a honey garlic sauce.


Ingredients

  • 14 ounces smoked sausage, sliced into ½-inch rounds
  • 2 large sweet potatoes, peeled and chopped into 1-inch cubes
  • 1 large head broccoli, cut into bite-sized florets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • ¼ cup honey
  • ¼ cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon of water

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Toss the sweet potato cubes with olive oil, salt, and pepper in a large bowl. Spread in an even layer on the baking sheet.
  3. Roast the sweet potatoes for 15 minutes.
  4. While they are roasting, prepare the honey garlic sauce by combining honey, soy sauce, minced garlic, and apple cider vinegar in a small saucepan. Bring to a simmer, then whisk in the cornstarch slurry and cook for 1-2 minutes.
  5. After 15 minutes, add the sliced sausage and broccoli to the baking sheet. Drizzle half of the honey garlic sauce over everything.
  6. Return the pan to the oven and roast for an additional 15-20 minutes, until the sweet potatoes are fork-tender and broccoli is crisp-tender.
  7. Remove from the oven and drizzle the remaining sauce over the top. Toss to coat before serving.

Notes

Pre-cook the sweet potatoes for best results and cut all ingredients evenly for uniform cooking.
