Description
A delicious and easy sheet pan meal combining savory sausage, sweet potatoes, and broccoli, all drizzled with a honey garlic sauce.
Ingredients
Scale
- 14 ounces smoked sausage, sliced into ½-inch rounds
- 2 large sweet potatoes, peeled and chopped into 1-inch cubes
- 1 large head broccoli, cut into bite-sized florets
- 1 tablespoon olive oil
- Salt and pepper, to taste
- ¼ cup honey
- ¼ cup low-sodium soy sauce
- 4 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon cornstarch mixed with 1 tablespoon of water
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Toss the sweet potato cubes with olive oil, salt, and pepper in a large bowl. Spread in an even layer on the baking sheet.
- Roast the sweet potatoes for 15 minutes.
- While they are roasting, prepare the honey garlic sauce by combining honey, soy sauce, minced garlic, and apple cider vinegar in a small saucepan. Bring to a simmer, then whisk in the cornstarch slurry and cook for 1-2 minutes.
- After 15 minutes, add the sliced sausage and broccoli to the baking sheet. Drizzle half of the honey garlic sauce over everything.
- Return the pan to the oven and roast for an additional 15-20 minutes, until the sweet potatoes are fork-tender and broccoli is crisp-tender.
- Remove from the oven and drizzle the remaining sauce over the top. Toss to coat before serving.
Notes
Pre-cook the sweet potatoes for best results and cut all ingredients evenly for uniform cooking.
