- 4 medium sweet potatoes, peeled and diced
- 3 tablespoons olive oil
- 1/4 cup honey
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine diced sweet potatoes with olive oil, honey, minced garlic, salt, and pepper. Mix well.
- Spread sweet potatoes onto a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, flipping halfway, until crispy on the outside and tender on the inside.
- Remove from the oven and garnish with fresh parsley if desired. Serve warm.
