Delicious honey garlic chicken & pineapple skewers perfect for summer barbecues and weeknight dinners.
Ingredients

- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 2 cloves minced garlic
- Pinch of black pepper
- Boneless, skinless chicken breasts (cubed)
- Fresh pineapple chunks
- Bell peppers (chopped)
- Red onions (chopped)
- Zucchini (chopped)
Instructions
- In a mixing bowl, combine honey, soy sauce, minced garlic, and black pepper. Mix well.
- Add the cubed chicken breast to the bowl and coat well with the marinade.
- Cover the bowl and refrigerate to marinate for at least 30 minutes, or up to 2 hours for enhanced flavor.
- Prepare the vegetables by chopping the bell peppers, red onions, and zucchini, and cutting the pineapple into chunks.
- Preheat the grill or grill pan over medium-high heat.
- Assemble the skewers by threading marinated chicken, pineapple, and chopped vegetables alternately.
- Grill the skewers for about 10-12 minutes, turning occasionally, until chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Let the skewers rest for a few minutes before serving with extra honey garlic sauce on the side.
Notes
For an extra kick, consider adding red pepper flakes to the marinade.
