Description

Delicious honey garlic chicken & pineapple skewers perfect for summer barbecues and weeknight dinners.


Ingredients

Scale
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 cloves minced garlic
  • Pinch of black pepper
  • Boneless, skinless chicken breasts (cubed)
  • Fresh pineapple chunks
  • Bell peppers (chopped)
  • Red onions (chopped)
  • Zucchini (chopped)

Instructions

  1. In a mixing bowl, combine honey, soy sauce, minced garlic, and black pepper. Mix well.
  2. Add the cubed chicken breast to the bowl and coat well with the marinade.
  3. Cover the bowl and refrigerate to marinate for at least 30 minutes, or up to 2 hours for enhanced flavor.
  4. Prepare the vegetables by chopping the bell peppers, red onions, and zucchini, and cutting the pineapple into chunks.
  5. Preheat the grill or grill pan over medium-high heat.
  6. Assemble the skewers by threading marinated chicken, pineapple, and chopped vegetables alternately.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Let the skewers rest for a few minutes before serving with extra honey garlic sauce on the side.

Notes

For an extra kick, consider adding red pepper flakes to the marinade.
