Description

A delicious and healthy dish combining tender chicken, fresh broccoli, and a sweet-and-savory honey garlic sauce. Perfect for quick weeknight dinners.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • Toasted sesame seeds for garnish (optional)
  • Cooked white or brown rice for serving (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook for 6-7 minutes until browned and fully cooked. Remove from skillet.
  2. In the same skillet, add the remaining olive oil and broccoli florets. Stir-fry for 3-4 minutes until bright green and tender-crisp.
  3. In a small bowl, whisk together honey, soy sauce, apple cider vinegar, and minced garlic to make the sauce.
  4. Return the chicken to the skillet, pour the honey garlic sauce over it, and mix well.
  5. Bring to a gentle simmer, add the cornstarch mixture, and cook for another 1-2 minutes until the sauce thickens.
  6. Toss to coat the chicken and broccoli in the sauce. Serve over cooked rice and garnish with toasted sesame seeds, if desired.

Notes

For a spicier version, add chili flakes or sriracha to the sauce. You can also substitute soy sauce with tamari for a gluten-free meal.
