Description
A delicious and healthy dish combining tender chicken, fresh broccoli, and a sweet-and-savory honey garlic sauce. Perfect for quick weeknight dinners.
Ingredients
Scale
- 1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cups broccoli florets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 1 tablespoon apple cider vinegar
- 3 cloves garlic, minced
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water
- Toasted sesame seeds for garnish (optional)
- Cooked white or brown rice for serving (optional)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook for 6-7 minutes until browned and fully cooked. Remove from skillet.
- In the same skillet, add the remaining olive oil and broccoli florets. Stir-fry for 3-4 minutes until bright green and tender-crisp.
- In a small bowl, whisk together honey, soy sauce, apple cider vinegar, and minced garlic to make the sauce.
- Return the chicken to the skillet, pour the honey garlic sauce over it, and mix well.
- Bring to a gentle simmer, add the cornstarch mixture, and cook for another 1-2 minutes until the sauce thickens.
- Toss to coat the chicken and broccoli in the sauce. Serve over cooked rice and garnish with toasted sesame seeds, if desired.
Notes
For a spicier version, add chili flakes or sriracha to the sauce. You can also substitute soy sauce with tamari for a gluten-free meal.
