Instructions
- Preheat your oven to 400°F (200°C).
- Wash and slice the sweet potatoes into rounds about 1/4 inch thick.
- Place the sweet potato rounds on a baking sheet and drizzle with olive oil, salt, and pepper. Toss to coat evenly.
- Roast in the oven for 20-25 minutes or until they are crispy and tender, flipping halfway through.
- Remove from the oven and let cool slightly.
- Top each sweet potato round with crumbled feta cheese and drizzle with honey.
- Return to the oven for an additional 5 minutes to warm the cheese slightly.
- Garnish with fresh herbs if desired and serve immediately.
