Delightful turnovers filled with a sweet pistachio and honey mixture, wrapped in flaky pastry.
Ingredients

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup unsalted butter, chilled and cubed
- 1/4 cup ice water
- 1 cup shelled pistachios, finely chopped
- 1/2 cup honey
- 1 teaspoon ground cardamom
- 1/4 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 egg, beaten
- 1 tablespoon milk
Instructions
- In a large bowl, combine the flour and salt.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until the dough comes together. Wrap in plastic and refrigerate for 1 hour.
- In a separate bowl, mix the chopped pistachios, honey, cardamom, cinnamon, and lemon juice until well combined.
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the chilled dough on a floured surface to about 1/8 inch thick.
- Cut the dough into 4-inch squares.
- Place a tablespoon of filling in the center of each square. Fold the dough over to form a triangle and seal the edges with a fork.
- Brush the tops with the egg wash mixture.
- Bake for 20-25 minutes or until golden brown and flaky. Let cool slightly before serving.
Notes
Chill the butter for flaky pastry and avoid overmixing the dough.
