Description

Delightful turnovers filled with a sweet pistachio and honey mixture, wrapped in flaky pastry.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, chilled and cubed
  • 1/4 cup ice water
  • 1 cup shelled pistachios, finely chopped
  • 1/2 cup honey
  • 1 teaspoon ground cardamom
  • 1/4 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 egg, beaten
  • 1 tablespoon milk

Instructions

  1. In a large bowl, combine the flour and salt.
  2. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until the dough comes together. Wrap in plastic and refrigerate for 1 hour.
  4. In a separate bowl, mix the chopped pistachios, honey, cardamom, cinnamon, and lemon juice until well combined.
  5. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  6. Roll out the chilled dough on a floured surface to about 1/8 inch thick.
  7. Cut the dough into 4-inch squares.
  8. Place a tablespoon of filling in the center of each square. Fold the dough over to form a triangle and seal the edges with a fork.
  9. Brush the tops with the egg wash mixture.
  10. Bake for 20-25 minutes or until golden brown and flaky. Let cool slightly before serving.

Notes

Chill the butter for flaky pastry and avoid overmixing the dough.
