Description

Ingredients

  • 1 cup mashed sweet potatoes (about 1 large sweet potato)
  • 1/2 cup unsalted butter, melted
  • 1/3 cup honey
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9-inch square baking dish or a cast-iron skillet.
  2. In a large mixing bowl, combine the mashed sweet potatoes, melted butter, honey, and granulated sugar. Mix until well combined.
  3. Add the eggs one at a time, beating well after each addition. Then stir in the buttermilk until the mixture is smooth and uniform.
  4. In a separate bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix.
  6. Pour the batter into the greased baking dish and smooth the top with a spatula.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean and the top is golden brown.
  8. Allow the cornbread to cool in the pan for about 10 minutes before slicing and serving.
