- 4 cups roasted sweet potatoes
- 1/2 cup butter, softened
- 1/3 cup honey
- 1/4 cup brown sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup pecans, chopped
- 1/4 cup flour
- 1/4 cup brown sugar (for streusel topping)
- 1/4 cup butter (for streusel topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, blend the roasted sweet potatoes, softened butter, honey, brown sugar, vanilla extract, and cinnamon until smooth.
- Pour the sweet potato mixture into a greased baking dish.
- In a separate bowl, mix chopped pecans, flour, brown sugar, and butter to create the streusel topping.
- Sprinkle the pecan streusel evenly over the sweet potato mixture.
- Bake in the preheated oven for 25-30 minutes until the topping is golden and crispy.
- Let cool slightly before serving.
Notes
For extra crunch, toast the pecans before chopping. If you want to keep the streusel crisp, store it separately and add it on top after reheating.
