- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup cream of chicken soup
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 teaspoon dried thyme (optional)
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Chicken: Trim any excess fat from the chicken breasts, rinse under cold water, and pat dry.
- Sauté the Onion and Garlic: Heat olive oil in a skillet over medium heat. Add onion and sauté for 3-4 minutes until softened, then add minced garlic for another minute.
- Cook the Chicken: Push onion and garlic aside, place chicken breasts in the pan, and sear for 3-4 minutes on each side until golden brown.
- Add the Liquid: Pour in chicken broth, stir in cream of chicken soup and Worcestershire sauce, season with salt, pepper and thyme. Bring to a gentle simmer.
- Shred the Chicken: Cover and simmer for 20-25 minutes until chicken is fully cooked. Remove chicken and shred with forks.
- Combine: Return shredded chicken to skillet, mix well with gravy, and cook for an additional 5 minutes.
- Serve: Garnish with parsley if desired, and serve hot over rice, mashed potatoes, or bread.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months. Reheat thoroughly before serving.
