- 4 cups all-purpose flour
- 1 packet (2¼ teaspoons) active dry yeast
- 1½ cups warm water (110°F to 115°F)
- 1 tablespoon granulated sugar
- 1 tablespoon kosher salt
- â…“ cup baking soda
- 1 large egg (for egg wash)
- Coarse sea salt (for topping)
Instructions
- Activate the yeast: In a small bowl, mix warm water with sugar and yeast. Let it sit for about 5-10 minutes until frothy.
- Mix the dough: In a large bowl, combine flour and salt. Slowly pour in the yeast mixture. Mix until a sticky dough forms.
- Knead the dough: Transfer the dough onto a floured surface. Knead for about 10 minutes or until the dough is smooth and elastic.
- First rise: Place the dough in a lightly oiled bowl. Cover it with a damp cloth and let it rise in a warm area for about 60 minutes or until it doubles in size.
- Shape the buns: Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and then flatten into a bun shape.
- Second rise: Place the shaped buns on a baking sheet lined with parchment paper. Cover them again and let them rise for another 30 minutes.
- Prepare the baking soda solution: In a large pot, bring 10 cups of water to a boil. Add baking soda carefully to avoid splattering.
- Boil the buns: Reduce the heat and drop the buns, one at a time, into the boiling water. Boil for 30 seconds on each side. Remove using a slotted spoon and return to the baking sheet.
- Egg wash: Beat the egg in a small bowl and brush it over the tops of the buns. Sprinkle coarse sea salt on top.
- Bake: Preheat your oven to 425°F (220°C). Bake the buns for 15-18 minutes or until they are golden brown.
- Cool: Let the buns cool on a wire rack before serving.
Notes
These buns can be stored at room temperature for up to 2 days, in the refrigerator for up to a week, or frozen for up to 3 months.
