Description

Delicious and soft potato donuts made with leftover mashed potatoes, perfect for a quick snack or breakfast.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Oil for frying
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. In a mixing bowl, combine mashed potatoes, flour, sugar, milk, melted butter, eggs, vanilla extract, nutmeg, baking powder, and salt. Mix until a dough forms.
  2. On a floured surface, roll out the dough to about 1/2 inch thick. Cut into donut shapes.
  3. Heat oil in a deep fryer or large pot to 350°F (175°C).
  4. Carefully fry the donuts in batches until golden brown, about 3-4 minutes each side. Remove and drain on paper towels.
  5. For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Dip the warm donuts in the glaze.
  6. Allow the glaze to set before serving.

Notes

For a lighter donut, do not overmix the dough once you add baking powder. You can also bake them at 375°F (190°C) for 12-15 minutes.
