Description

A quick, colorful stir fry packed with nutrients featuring ground chicken, zucchini, and other fresh vegetables.


Ingredients

  • 1 lb ground chicken
  • 2 medium zucchinis, sliced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the minced garlic and sauté until fragrant.
  3. Add the ground chicken and cook until browned and fully cooked through.
  4. Toss in the sliced zucchinis, bell pepper, and broccoli. Stir-fry for about 5-7 minutes, until the vegetables are tender.
  5. Pour in the soy sauce and stir to combine, cooking for another minute or two.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with sesame seeds if desired.

For variations, feel free to swap ground chicken with turkey or tofu, and add your favorite vegetables.
