Ingredients

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup milk
- 1/2 cup sugar
- 1/4 cup all-purpose flour (for cream filling)
- 2 teaspoons vanilla extract
- 1 cup heavy cream
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the water and butter in a saucepan; bring to a boil.
- Remove from heat, and quickly stir in 1 cup of flour until the mixture forms a ball.
- Allow the dough to cool slightly, then add eggs one at a time, beating well after each addition.
- Pipe the dough onto a baking sheet in 4-5 inch long strips.
- Bake for about 25-30 minutes or until they are puffed and golden brown. Let cool.
- Heat the milk in a saucepan for the filling.
- Whisk together sugar and flour in a bowl, then slowly add the hot milk.
- Return to heat and stir until thickened.
- Remove from heat, stir in vanilla, and let cool.
- Whip the heavy cream until stiff peaks form, then gently fold into the cooled pastry cream.
- Fill cooled eclairs with the cream filling, and serve.
Notes
Best served fresh, but can be stored in the refrigerator for up to 2-3 days.
