Ingredients

  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon red food coloring
  • Confectioners’ sugar for dusting

Instructions

  1. Prepare your workspace by covering with parchment paper.
  2. In a medium saucepan, mix the sugar, corn syrup, and water. Stir well.
  3. Cook on medium heat, stirring constantly until the sugar dissolves, then stop stirring once boiling.
  4. Use a candy thermometer, cooking until reaching 300°F (hard crack stage).
  5. Remove from heat and stir in the peppermint extract. Divide into two bowls; tint one with red food coloring.
  6. Pour mixtures onto parchment paper and let cool until manageable.
  7. Lightly oil hands and roll both mixtures into thin sticks, twisting them together.
  8. Allow sticks to cool completely on parchment paper.
  9. Dust cooled sticks with confectioners’ sugar to prevent sticking.
  10. Store in an airtight container.
