- 1/2 cup light corn syrup
- 1/2 cup water
- 1/2 teaspoon peppermint extract
- 1/4 teaspoon red food coloring
- Confectioners’ sugar for dusting
Instructions
- Prepare your workspace by covering with parchment paper.
- In a medium saucepan, mix the sugar, corn syrup, and water. Stir well.
- Cook on medium heat, stirring constantly until the sugar dissolves, then stop stirring once boiling.
- Use a candy thermometer, cooking until reaching 300°F (hard crack stage).
- Remove from heat and stir in the peppermint extract. Divide into two bowls; tint one with red food coloring.
- Pour mixtures onto parchment paper and let cool until manageable.
- Lightly oil hands and roll both mixtures into thin sticks, twisting them together.
- Allow sticks to cool completely on parchment paper.
- Dust cooled sticks with confectioners’ sugar to prevent sticking.
- Store in an airtight container.
