- 1 cup raw hazelnuts, chopped
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/3 cup coconut oil
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chunks
Instructions
- In a large bowl, mix together the rolled oats, chopped hazelnuts, cocoa powder, and salt.
- In a small saucepan over low heat, melt the coconut oil.
- Remove from heat and stir in maple syrup and vanilla.
- Pour the wet ingredients into the dry mixture and stir until everything is well coated.
- Spread the mixture onto a parchment-lined baking sheet in an even layer.
- Bake at 325°F (160°C) for 25 to 30 minutes, stirring once halfway through.
- Let the granola cool completely on the baking tray.
- Once cool, stir in the dark chocolate chunks.
- Store in an airtight container at room temperature for up to 2 weeks.
