  • 1 cup baby spinach
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon miso paste (optional)
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Soft-boiled eggs (optional for garnish)
  • Sesame seeds (optional for garnish)

Instructions

  1. Prepare the broth: In a large pot, combine the chicken broth and water. Bring to a boil over medium-high heat.
  2. Add chicken and noodles: Once the broth is boiling, add the shredded chicken and the ramen noodles. Let it cook for about 3-4 minutes, or until the noodles are tender.
  3. Incorporate vegetables: Add the sliced mushrooms, baby spinach, minced garlic, soy sauce, and ginger to the pot. Stir well to combine and let the soup simmer for another 3-5 minutes.
  4. Final touches: Taste the soup and add salt and pepper as needed. If you’re using miso paste, whisk it into a small bowl with a bit of hot broth until smooth, then stir it back into the pot.
