Ingredients

- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the broccoli florets and pour in the broth. Bring to a boil, then reduce heat and simmer until the broccoli is tender, about 10 minutes.
- Use an immersion blender or transfer to a blender to puree the soup until smooth.
- Return the pot to low heat, stir in the heavy cream and shredded cheddar cheese, and mix until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste.
- Serve hot with crusty bread for dipping.
Notes
Use fresh broccoli for the best flavor and avoid overcooking it.
