Description

A comforting and creamy broccoli cheese soup that’s both delicious and nutritious.


Ingredients

Scale
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the broccoli florets and pour in the broth. Bring to a boil, then reduce heat and simmer until the broccoli is tender, about 10 minutes.
  4. Use an immersion blender or transfer to a blender to puree the soup until smooth.
  5. Return the pot to low heat, stir in the heavy cream and shredded cheddar cheese, and mix until the cheese is melted and the soup is creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot with crusty bread for dipping.

Use fresh broccoli for the best flavor and avoid overcooking it.
