Description

Ingredients

  • 1 pound lean ground beef
  • ½ cup diced yellow onion
  • 2 garlic cloves, minced
  • 2 Tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 Tablespoon dried minced onion flakes
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups shredded cheddar cheese (divided use)
  • 1 cup sour cream
  • 3 cups diced russet potatoes (about 3 russet potatoes)
  • 1 cup diced carrots
  • 1 Tablespoon dried parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a sauté pan, add ground beef, diced onion, and minced garlic over medium heat. Sauté for 5–7 minutes or until the beef is browned and juices run clear.
  3. Add the flour and stir for 1 minute.
  4. Pour in the beef broth, then add the dried minced onion, onion powder, garlic powder, Worcestershire sauce, salt, and black pepper. Stir everything for another minute.
  5. Mix in 1 cup of shredded cheddar cheese and sour cream until well combined.
  6. Transfer the meat mixture to a baking dish.
  7. Add the diced potatoes and carrots. Stir to combine.
  8. Top with the remaining 2 cups of shredded cheddar cheese.
  9. Cover the dish with aluminum foil and bake for 30–35 minutes, or until the potatoes and carrots are fork-tender.
  10. Before serving, garnish with dried parsley if desired.

Notes

Hobo Casserole can be customized with different vegetables or meats. Consider storing leftovers in an airtight container for up to 3–4 days in the refrigerator.
