Description
A delicious and nutritious veggie bake packed with high protein from cottage cheese and eggs, perfect for any meal.
Ingredients

- 2 cups of broccoli florets
- 1 cup of chopped bell peppers (mix of red and yellow)
- 1 cup of diced zucchini
- 1 cup of baby spinach
- 1 cup of cottage cheese
- 2 large eggs
- 1 cup of shredded mozzarella cheese
- 1/2 cup of grated Parmesan cheese
- 1 tsp of garlic powder
- 1 tsp of onion powder
- 1/2 tsp of salt
- 1/2 tsp of black pepper
- 1/2 tsp of dried oregano
- 1/2 tsp of dried basil
- Cooking spray or olive oil for greasing
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the cottage cheese, eggs, garlic powder, onion powder, salt, pepper, oregano, and basil. Mix well until all ingredients are fully incorporated.
- In another bowl, add the chopped broccoli, bell peppers, zucchini, and spinach. Toss the veggies together until well mixed.
- Carefully fold the vegetable mixture into the cottage cheese and egg mixture. Stir gently until the veggies are evenly coated with the batter.
- Grease a 9×13 inch baking dish with cooking spray or olive oil. Pour the mixture into the prepared dish and spread it evenly using a spatula.
- Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top of the veggie mixture.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and the bake is set in the middle.
- Once baked, remove from the oven and allow it to cool for about 5 minutes before slicing. Serve warm and enjoy!
