Description

A delicious and healthy High-Protein Vegetarian Lentil Soup packed with flavors and nutrition.


Ingredients

  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until translucent.
  2. Add carrots and cook for another 5 minutes.
  3. Stir in lentils, vegetable broth, and cumin. Bring to a boil.
  4. Reduce heat, cover, and simmer for 25-30 minutes or until lentils are tender.
  5. Stir in fresh spinach and let it wilt.
  6. Season with salt and pepper to taste. Serve warm.

Notes

Don’t overcook lentils as they can become mushy. Adjust seasoning based on the broth used. Always add spinach just before serving for optimal freshness.
